Located at 1600-1800 masl. In the highlands of Kiambu Country, Kiairia Factory processes cherries from smallholder farmers cultivating SL28, SL34, Batian, and Ruiru 11 varieties. Cherries are handpicked, sorted, pulped and fully washed before fermentation for 12-24 hours. The parchment is then washed and sun-dried on raised beds for 7-14 days. The region's red volcanic soils, consistent rainfall, and moderate temperatures (18-25 degrees celsius) support slow cherry development and high cup quality.
